Leonid was born into a coffee farming family and owns Cortina de Hierro, a 4-hectare farm in Genova, Quindío, at 1900 m.a.s.l.
This coffee follows strict ripeness criteria. After floAtation and hand-sorting for defects, the cherries undergo 30 hours of underwater fermentation before pulping. The parchment is gently washed and dried in controlled conditions to achieve ideal moisture content.
This microlot is 100% Castillo, which is a more productive varietal than Caturra and is also resistant to coffee leaf rust! this cup offers a balanced and sweet flavour profile.
