What is the Sugarcane Process?
The sugarcane process takes its name from ethyl acetate (EA), a natural compound sourced from sugarcane and also present in fruits and other foods. This method works because EA, being sugar-derived, binds to the chlorogenic acids in caffeine. Once bonded, the caffeine is separated from the coffee bean, effectively decaffeinating it. Once the caffeine has been removed, the beans are steamed for a second time to remove all remaining traces of EA.
