José Salazar, Colombia - Special Release Filter (Bourbon Aji)

This unique coffee was produced by José Hermán Salazar, from the town of Pitalito in southern Colombia. José’s coffee first caught our attention at Colombia’s Cup of Excellence competitions in 2020 and 2021, where he secured 6th and 5th place respectively.

This lot features what José calls the “Ají” varietal, named after the Spanish word for chili pepper due to the spicy aroma emitted by its cherries.

José is currently passing on his knowledge about the farm and coffee to his daughter, ensuring that she will eventually take over the farm and carry on its legacy for years to come. This will allow the Bourbon Aji variety to be produced for many years, remaining a staple of the family and farm.

Expect a juicy, sweet, and complex cup.
