Today, smallholders propel the industry in Rwanda. The country doesn’t have any large estates and most coffees are grown by the 400,000+ smallholders, who each own less than a quarter of a hectare.
The washing station employs a rigorous sorting process, with staff using floatation to remove lower quality cherries, followed by visual inspections for defects. After sorting, a Pinhalese pulper removes up to 80% of the mucilage, and the parchment undergoes a 10-hour fermentation before drying on raised beds. Regular sorting during drying ensures the removal of imperfections, contributing to even drying.
