This coffee is harvested following strict ripeness criteria, floated, and hand sorted to remove defects. The cherries are fermented for 30 hours in water before pulping. The parchment is gently washed and dried in temperature controlled conditions for ideal moisture content.

This microlot is 100% Caturra, a variety originating in Minas Gerais, Brazil. It is a natural mutation of Red Bourbon. Caturra yields more coffee and is more disease resistant than Bourbon. 

A great espresso for those who crave a well balanced and structured cup with subtle fruit undertones!
