Colombia has built its reputation on clean, classic washed coffees. But in Tablón de Gómez, high up in the mountains of Nariño, a group of producers decided to break the mould.

Honey processing isn’t common here. The cool, misty climate makes drying slow and risky — too much stickiness, not enough airflow, and you’ve got a recipe for defects. Most farmers avoid it. But the Honey Mountain community leans in, taking on the challenge to show what happens when you mix patience, precision, and a little rebellion.

The payoff is huge:
