The processing of Colombia Carambolo involves a three-stage process that ensures the highest quality and complexity in the cup.
The first stage focuses on washing and disinfecting the cherries upon arrival at the processing station. This is followed by the cherries undergoing an oxidation stage for 24 hours before being de-pulped. This oxidation period helps develop the coffee's flavours, allowing the natural enzymes to enhance the beans' aromatic compounds. After de-pulping, the beans are thoroughly rinsed to remove the mucilage, a crucial step in the washed process that ensures a clean and crisp flavour profile. The final stage is a controlled and homogeneous mechanical drying process.
