A rare mutation from acevedo huila. This chilli bourbon, grown by Jairo Arcila at the farm Santa Monica, was exposed to a dry aerobic fermentation of 24 hours before being placed inside grainpro bags for 90 hours and maintained at a temperature below 22 degrees. This environment allows the bacteria to feed on carbohydrates and sugars that are found on the mucilage which producing a higher concentration of lactic acid. Following fermentation, this coffee was placed on raised beds to dry until 11% moisture content is achieved.
