At Finca Vizcaya, Francisco prioritises sustainable production, including beekeeping and composting coffee pulp for organic fertiliser.
They handpick only ripe, red cherries, which are then pre-fermented for 24 hours to enhance flavour. Afterward, the cherries are pulped and fermented for 12 hours. Following fermentation, the parchment is washed and dried on patios for about 12 days.
This meticulous process results in coffee known for its bright, sweet acidity, offering a refreshing and balanced cup.
