Daniel and Guaya planted Bourbon variety trees on Finca El Destello for high-quality coffee. The climate, volcanic soil with occasional ash from Volcan Fuego, and constant but low humidity are ideal for coffee. Abundant year-round sunlight and cool nights aid cherry development.
Selective handpicking and on-site processing occur, with cherry floated to remove underripes and pulped for density separation. Fermentation takes place in tiled tanks for 36 hours. Parchment is then washed and sun-dried on raised beds, raked frequently for even drying.
