Growing high-quality coffees has enabled Francisco Quiñonez to provide a good life for his family. He inherited Finca El Cerro from his parents and today, his eldest son is studying agronomy and plans to take over the farm when Francisco retires.
The handpicked cherries are floated to remove any underripes. Only the ripe red cherries are pulped, followed by a 36 hour fermentation. Afterwards, the parchment is washed in fresh water and laid out on raised beds to dry. The parchment is frequently raked to ensure an even drying process.
This sweet, rich and spicy cup will be a crowd favourite!
