Nestled in Huila at 1730m altitude, Las Flores Farm spans 14 hectares, yielding dual coffee crops yearly. Their specialty journey began after the 2006 Cup of Excellence, spurring years of experimentation and learning.
Handpicked and naturally dried, their coffee maintains quality. Employing diverse fermentation methods, from oxidation to anaerobic and bag fermentation, yields distinct flavours.
The Java varietal was originally introduced to the island of Java directly from Ethiopia by the Dutch in the early 19th century. It was thought to be a Typica variety, but in fact, it was an Ethiopia Landrace – Abyssinia. It is known to have better tolerance to coffee leaf rust (CLR) and diseases than other arabica varieties.
This coffee goes through fermentation process for about 60 hours. During this time, it is abruptly interrupted with hot water and then cold water quenching which lasts approximately 30 minutes.
Quenching is a critical step in the fermentation process. The combination of hot and cold water helps to initially open the pores in the bean and then fixates the volatile compounds.
